Vegan Gingerbread Man Cookie Recipe

The perfect yummy cookie recipe for the holidays!

Information
Prep time: 20 minutes
Cook time: 15 minutes
Yield: 24 cookies
Ingredients for Cookies
- 1/4 cup vegan butter (I used a vegetable oil spread) 
- 1/2 cup brown sugar 
- 1/3 cup molasses 
- 1/2 cup apple sauce (acts as the egg) 
- 1/2 tsp vanilla extract 
- 2 cups flour 
- 1 tsp baking soda 
- 1/4 tsp salt 
- 2 tsp ground cinnamon 
- 2 tsp ground ginger 
- 1/4 tsp allspice 
- 1/4 tsp nutmeg 
Ingredients for Icing
- 3/4 cup powdered sugar 
- 1 Tbsp almond milk (or other non-dairy milk) 
- 1/2 tsp vanilla extract 
Instructions
- Preheat oven to 350 degrees 
- Add butter and brown sugar to an electric mixer and cream together at a medium speed 
- Add molasses, applesauce, and vanilla extract to other ingredients in electric mixer and stir together at a medium to high speed 
- Add all remaining dry ingredients to mixer and mix together at a lower speed until a thick dough is formed 
- Remove dough from mixer and place onto countertop coated with flour. 
- Add as much flour as needed so the dough does not stick to hands or counter (might be upwards of 1/2 cup) 
- Use hands or rolling pin to thin out dough to 1/8-1/4 inch thick 
- Use cookie cutters to cut out about 24 gingerbread men 
- Place on baking sheets and put into oven for 10-15 minutes, checking periodically 
- While the cookies bake, prepare to make the icing 
- Combine all icing ingredients into a bowl and mix together with a fork 
- Once cookies are out of the oven and cooled, drizzle icing over cookies
