Vegan Breakfast Burrito Bowls

Prep time: 10 minutes

Cook time: 10 minutes

Yield: 2 bowls


Ingredients

  • 1/2 bottle of "Just Egg" (vegan egg substitute)

  • 2 cups of rice

  • 1 can of black beans

  • 1/4 of a chopped green pepper

  • 1/2 cup edamame beans

  • 2 whole wheat tortillas

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

  • 1 Tbsp olive oil

  • 1 slice or 1/4 cup of vegan cheese (I used "Daiya" cheddar cheese slices)

  • guacamole and salsa to taste


Instructions

  1. place olive oil in a pan with edamame and green peppers

  2. heat up black beans and rice

  3. after vegetables have softened, add onion and garlic powder

  4. add "Just Egg" to the pan as well

  5. break apart cheese into smaller pieces and add to pan

  6. once egg mixture is done cooking, heat up the tortillas

  7. place tortillas in the bottom of a bowl

  8. add egg mixture, rice, and beans on top of the tortilla

  9. top with salsa and guacamole
