Vegan Crepes

Yield: 8 crepes
Crepe Ingredients
1 cup flour
1 cup almond milk
1/2 tsp salt
1 tsp agave syrup (or other sugar substitute)
1 tsp vanilla extract
1 Tbsp olive oil
Topping Ideas
strawberries
bananas
blueberries
hazelnut spread (ensure vegan)
peanut butter
almond butter
vegan whipped cream
maple syrup
powdered sugar
Instructions
add flour to the bowl and slowly whisk in almond milk until all flour chunks are gone (the consistency should be very thin, much thinner than pancake mix)
add and whisk in salt, agave syrup, vanilla extract, and olive oil
once batter is smooth and thin, prep the frying pan with enough olive oil to cover it and place over low-medium heat
pour a baseball sized circle onto the pan
pick pan up and roll the batter around until it coats the entire bottom of the pan (the goal is to make the batter as thin as possible to coat the entire pan)
after about 30 seconds flip the crepe to the other side and cook for another 30 seconds
continue this process until the batter is finished
add preferred toppings and enjoy!
